List the Odoo apps your team opened in the last quarter. If the honest answer is CRM and nothing else, you are paying an all-apps price for one app. If Inventory, Accounting or Manufacturing appear on that list, stop here and stay on Odoo.
Export your records from Odoo's list views. Open Contacts, then Leads and Opportunities, select all records and use the export action to download CSV or XLSX. Save the export template so you can repeat the same pull for a final delta on cutover day.
Export activities, notes and attachments separately. They live on related models and will not come out inside the opportunity file. Make a checklist of the attachments you need to keep and download them before the account is closed.

Odoo's pricing tells you what kind of product it is. There is One App Free, which gives a single app to unlimited users on Odoo Online hosting. Above that sit Standard at 24.90 dollars per user per month on annual billing, or 31.10 billed monthly, and Custom at 49 dollars annually or 61 monthly. Both paid plans include every app in the catalogue: sales, accounting, inventory, manufacturing, HR, projects, ecommerce and the rest. India runs on a cheaper regional pricelist, broadly 580 to 725 rupees per user monthly on Standard and 890 to 1,150 on Custom. There is no per-module menu where a sales team can buy CRM alone. That is a deliberate design choice, and for a company running operations in Odoo it is generous value.
It is much worse value for the team that only opened the CRM. This happens more often than Odoo's marketing suggests. A company adopts Odoo because a partner recommended it, or because finance wanted the accounting module, and the sales team gets added to the same subscription. Two years later the pipeline is in Odoo, nobody in sales has touched Inventory or Manufacturing, and every seat is billed at the all-apps rate. The alternative is staying on One App Free, which works until somebody needs a second app or external API access, at which point the whole user base converts to a paid plan at once. Either way, the sales team's software cost is decided by a suite it does not use.
The second issue is fit rather than cost. Odoo's design centre is operations, and that shows in the selling tools. Calling means a VoIP integration. WhatsApp exists as a module on paid plans but has to be wired through Meta first. Lead scoring, sequences and call recording are things you assemble from parts.
