Almost every pipeline principle borrowed from other industries needs adjusting for hospitality, because the thing being sold is perishable and unique. A ballroom on the second Saturday of the wedding season exists once. If it is held for an enquiry that never confirms, that revenue is not delayed, it is gone. If it is sold cheaply in a week when three other enquiries were circling, the loss is invisible and permanent. This is why hotel sales teams need a working discipline around holds and releases far more than they need a sophisticated funnel.
It also means the pipeline has to be readable two ways. By account, so a sales manager can work their relationships. And by date, so a revenue meeting can ask what is happening on a specific weekend and get an answer that includes every competing enquiry, every hold and its release date.
