What each option actually means
On-premise means you run it
An on-premise CRM is software installed on infrastructure you control, typically a server in your office or a machine you rent in a data centre. You own the database, the operating system, the backup schedule, the patch cycle and the uptime. In exchange you can modify deeply, keep data physically where you choose, and continue working if your internet connection drops.
Cloud means the vendor runs it
A cloud CRM is delivered as a service. The vendor operates the infrastructure, applies updates, monitors availability and takes backups, and you reach the application through a browser or mobile app. You give up low-level control and gain the operational work that control would otherwise require.
