How food and beverage actually sells in the United States
Three channels, three completely different sales processes
A brand is usually selling into retail, through distribution and into foodservice at the same time. Retail turns on category reviews and buyer calendars. Distribution turns on onboarding paperwork and velocity. Foodservice turns on a chef tasting and an operator's specification. Treating them as one pipeline makes every forecast wrong in a different way.
Winning the listing is only half of it
An authorisation is not revenue. Item setup, distributor routing, first shipment and then movement on shelf all sit between the yes and the money. Brands that stop selling once an item is authorised are the ones surprised at the next review.
